Honey and pineapple muffins & Healthy frosting | Muffins au miel et ananas & Glaçage santé

I wanted to reproduce my mom’s bread; honey and pineapple, but like muffin because it is so good for a breakfast then a healthy snack. The fresher of the pineapple and the sweet taste give a little bit of sweetness to your morning. Try it hot with honey, its crazy!

Je voulais reproduire le pain au miel et ananas de ma mère, mais comme muffin puisqu’il est autant succulent pour déjeuner que pour une collation santé! La fraîcheur de l’ananas et juste le petit goût sucré donne une petite douceur à votre matin. Essayer-le chaud avec du miel, c’est fou!

Portion : 6 (Big muffins) – 9 (Small muffins)
Time : 45 mins. | Temps : 45 mins. 
 Ingredients:
1 + ½ cup white rice flour (or other flour)
1 + ½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
¼ cup white sugar
1 egg and 1 white egg
¼ cup coconut oil (or vegetal)
¼ cup honey
4 oz (1/2 can) chopped pineapple and keep the rest for the frosting
1/3 cup water
¼ teaspoon vanilla extract
¼ cup walnuts, coarsely chopped
Frosting:
1/3 cup plain yogurt
2 tablespoons pineapple juice (take the juice of the can)

What to do:
  1. Preheat the oven at 325°F. Take a muffin plate and butter and flour 6 or 9 molds or place papers cups molds.
  2. In a large bowl, mix all the dry ingredients and set aside.
  3. Beat eggs until light and lemon colored. Stir in beaten eggs, oil, honey, pineapple, water and vanilla.
  4. Add the egg mixture to the dry ingredients mix lightly. Add walnuts and spread the mixture into 6 or 9 cups.
  5. Bake for 25 minutes or until the time the center is cooked. Let cool and sprinkle with frosting if desired.

Ingrédients :
1 + ½ tasse de farine de riz blanc (ou autre farine)
1 + ½ c. à thé de poudre à pâte
½ c. à thé de soda à pâte (baking soda)
½ c. à thé de sel
¼ tasse de sucre
1 œuf et 1 blanc d’œuf
¼ tasse d’huile de coconut (ou végétale)
¼ tasse de miel
4 oz (1/2 boîte) d’ananas haché et conserver le reste pour le glaçage
1/3 tasse d’eau
¼ c. à thé d’extrait de vanille
¼ tasse de noix de Grenoble haché grossièrement
Glaçage :
1/3 tasse de yogourt nature
2 c. à table de jus d’ananas (prendre celui de la conserve)  

Ce qu’il faut faire :
  1. Préchauffer le four à 325°F. Prendre une plaque à muffin et beurrer et fariner 6 ou 9 moules ou déposer des moules en papier.
  2. Dans un grand bol, mélanger les ingrédients secs. Réserver
  3. Battre les œufs jusqu’à ce qu’ils soient légers et couleur citron. Incorporer aux œufs battus, l’huile, le miel, les ananas, l’eau et la vanille.
  4. Ajouter le mélange d’œufs, aux ingrédients secs et mélanger légèrement. Ajouter les noix et étendre la préparation dans 6 ou 9 moules.
  5. Cuire pendant 25 minutes ou jusqu’à temps que le centre soit cuit. Laisser refroidir et garnir avec le glaçage si désiré.
